A crumb coat runs about an eighth of an inch and a final coat about a quarter, both trade convention thicknesses. Weight assumes American buttercream at roughly half a pound per cup, itself a convention rather than a fixed density.

How much more does a 3 layer cake need?

Noticeably more, and the reason is entirely side area. A third layer raises the finished cake by roughly the height of one more layer of batter, and every added inch of height is an added inch of side to frost all the way around.

This is also why two cakes of the same diameter but a different layer count can call for very different amounts of buttercream even though they look similar from above. How much buttercream for a square or sheet cake?

A square or rectangular cake has more side to cover than a round cake of similar area, because a square perimeter is longer than a circle's for the same area, so it takes proportionally a little more. The gap widens further for a long, narrow rectangle, since two short ends add comparatively little side area while two long sides add a great deal.
