What you can skip
Skip the commercial 8 quart mixer unless you are running a business. It is NSF rated and gear driven and it is a genuinely different machine, and it is also heavy, loud and too large to lift onto a shelf. A 7 quart covers everything a home kitchen does.
Skip the polycarbonate moulds unless you are actually tempering. They only pay for themselves against a properly tempered chocolate, and an untempered chocolate will look dull in the shiniest mould ever made.
What to upgrade first
There is not much above this, which is the honest answer. The one genuine step up is the Ankarsrum Original AKM 6230 Stand Mixer at $1,350.00, whose rotating bowl and fixed roller are a different mixing action rather than a bigger version of the same one. It makes sense if you bake several times a week for years and not otherwise.
Before the cake leaves the kitchen
Cream cheese and whipped cream frostings need refrigeration, and plain buttercream softens in a warm room long before it is unsafe, which is a structural problem rather than a health one. Royal icing made with raw egg white, and mousses set with raw egg, are worth swapping for pasteurised egg white or meringue powder when you are baking for children, older guests or anyone pregnant. Ask about allergies before you start rather than after, because cross contact happens at the mixing bowl. And selling cakes rather than giving them away is governed by your state cottage food law, which varies a great deal.
