For a stacked cake the wedding portion is usually the right convention, because a tiered cake nearly always follows a meal and sits beside other desserts.

The formula

total servings = sum of each tier area / slice footprint

Each tier is worked out on its own and the results are added. The dowel counts come from the circumference of a ring set one inch inside the footprint of the tier above, at roughly three inch spacing with a floor of four.

The weight figure is an estimate from tier volume at roughly 0.032 lb per cubic inch for frosted cake. It is there to tell you whether a tier is heavy enough to worry about, not to be quoted.

Derived, published or convention?

Tier areas and the dowel ring geometry are DERIVED. The portion sizes, the three inch dowel spacing, the one inch inset and the minimum of four dowels are all TRADE CONVENTION. The weight is a derived estimate, not a measurement.

Questions people ask

Should a tiered cake use wedding or party portions?
Wedding portions, in most cases. A stacked cake is nearly always cut after a meal and sits beside other desserts, so the smaller catering slice is what people actually take. Use party portions only when the tiered cake is the single dessert at an event, such as a birthday, where guests expect a normal slice rather than a finger of cake.
Do tiers have to step down by two inches?
No, though two inches is the commonest ladder because it looks balanced and leaves room for a dowel ring inside the upper footprint. Three or four inch steps give a more dramatic stack and more room to decorate each tier separately. A one inch step looks crowded and leaves very little margin for the dowel ring, which is structural as well as visual.
How much does a tiered cake weigh?
More than people expect. A three tier cake at 6, 9 and 12 inches comes to roughly 26 lb finished, and every pound of that rests on the tier below it. That is the number that decides whether plastic dowels are enough or whether the base tier needs a separator plate to spread the load across the whole ring.
Can I mix pan shapes in one stack?
Yes, and square on round is a common combination. The arithmetic still works because each tier is calculated from its own area. What changes is the dowelling: a round tier sitting on a square one still needs its ring set inside the round footprint, so mark the circle rather than working from the square edges below it.
