The formula

Dowels sit in a ring just inside the footprint of the tier above, so the count follows from the circumference of that ring at roughly three inch spacing, never fewer than four because three can rock.

The part that decides whether a stack sits level is not the count. It is that every dowel is the same length. The tier above rests on whichever dowels are tallest, so one dowel two millimetres proud carries the entire load and tilts the tier. Cut one to the height of the cake, then cut the rest to match that one rather than measuring each in place.

A centre dowel is a separate matter. The ring carries vertical load and does nothing against sideways movement, so a stack that meets a roundabout will shear one tier off another unless a single sharpened dowel runs down through everything.

Questions people ask

Can I use drinking straws instead of dowels?
Thick bubble tea straws work for small, light tiers and plenty of decorators use them. The caveat is how they fail: a straw buckles suddenly rather than bending first, so there is no warning. On anything above about six pounds, or on a cake that has to travel, plastic dowels cost very little and remove the question.
Why must all the dowels be the same length?
Because the tier above rests on whichever dowels are tallest. If one is two millimetres proud, that single dowel carries the whole load and the tier sits at an angle. Cut one dowel to the height of the cake, then cut the rest to match that one rather than measuring each in place, and the load spreads across all of them.
Do I need a board under every tier?
Yes, under every tier except the bottom one, which sits on the base board. The board is what spreads the weight of a tier across the dowel ring beneath it. Without one, the cake of the upper tier presses straight down onto the dowel tops and they push up into it, which shows through the frosting within hours.
Should I stack a cake at home or on site?
On site, whenever it is practical. Transport the tiers boxed and separately and assemble where the cake will be served. Every professional does this, and the reason is simply that no amount of dowelling survives a hard brake. If the cake must travel stacked, the centre dowel stops being optional.
