The cake area is a derived figure from the pan dimensions. The slice footprint is a trade convention, and it is the only reason these three numbers differ.

The formula

servings = cake top area (sq in) / slice footprint (sq in)

The cake area comes from plane geometry: pi times the radius squared for a round pan, length times width for a rectangle. That part is not open to interpretation.

The slice footprint is where the convention enters. A wedding portion is 1 inch by 2 inches at the base, a party portion 1.5 by 2, and a generous dessert portion 2 by 2. Divide one by the other and you have the count.

Height is deliberately not a factor. A six inch tall cake cut to the same footprint yields the same number of slices, each one taller.

Derived, published or convention?

The area is a DERIVED figure. The portion sizes are TRADE CONVENTION, and they are the only reason the three numbers differ. The published Wilton serving guide uses the same slice footprints, which is why the figures here land within a serving or two of it across the common sizes.

Questions people ask

Why does this calculator give three numbers instead of one?
Because one number would be misleading. A 12 inch round cake honestly serves 56 people at wedding portions and 37 at party portions, and the difference is the width of the slice rather than anything about the cake. Most serving charts print a single figure without saying which convention it assumes, and a reader who takes the wrong one is short by a third of the room.
Does a taller cake serve more people?
No. Serving counts come from the top area, because that is what you divide up when you cut. A three layer cake and a two layer cake of the same diameter serve the same number; the three layer version simply gives taller slices. This surprises almost everyone, and it is why adding a layer is not a way to feed more guests.
How should I cut a round cake to get the calculated number?
Cut concentric rings rather than radial wedges. Score a circle about two inches in from the edge, cut that outer ring into one inch fingers, then work inward. Radial wedges waste area because each slice tapers to nothing at the centre, and that is the usual reason a cake that should have served sixty ran out several people short.
Should I size a cake for exactly the number of guests?
Add a margin, because portions are never cut as evenly as arithmetic assumes. A common approach for a large event is to size the display cake for appearance and keep a plain sheet cake in the kitchen to cut from once it runs low. That is cheaper per serving than adding a tier and nobody at the table can tell the difference.
